Pasta with Arugula, Olives, Mushrooms, Zucchini

Pasta with Arugula, Kalamata Olives, Shiitake Mushrooms or Zucchini1/4 pound Penne pasta or angel hair pasta
1 1/2 T olive oil
1-3 cloves garlic, minced or pressed
1 onion, peeled and diced
2 ounces of fresh shiitake mushroom, zucchini or whatever else
2 pounds of fresh tomatoes chopped
1 hot or medium-hot pepper, seed removed and chopped
5 T chopped Kalamata olives
1/2 tsp salt
1.5-2 cups chopped arugula
fresh basil, chopped
1/2 cup freshly grated Parmesan or Asiago cheese

Put on a large pot of water and cook pasta while you prepare sauce. Heat olive oil, add garlic, onion. When brown, add mushrooms or zucchini, tomatoes, pepper, olives and salt. Allow to simmer for 5 min.; add arugula and half of the basil. By now the pasta should be cooked and drained. Toss pasta with sauce, rest of the basil and cheese and serve immediately.
