Pasta with Tomato, Fresh Mozzarella and Arugula

Time to savor those precious end-of-summer tomatoes–perfect with the fresh mozzarella, arugula and penne pasta. Toss it all up just after the pasta cooks and serve immediately for best results.

Ingredients
3 c Chopped fresh tomatoes
1 ts Salt
6 c Trimmed arugula
1/2 ts Freshly ground pepper
8 oz Fresh mozzarella cheese
1 lb Penne pasta; cooked
2 TB Olive oil

Instructions
Combine tomatoes, arugula, cheese, oil, salt and pepper in large bowl. Toss with penne.
