Spring Harvest for 4-19-11

In today’s harvest you will have

Japanese Turnips

Swiss Chard

Spinach

Asparagus- we are trying to get enough for everyone to a have a little with hope there will be more in the weeks to come

Carrots

Head Lettuce

Green Onions

Butternut Squash

Potatoes

Bundle of Mustard greens

Green Garlic- this is like green onions, but it is garlic, it will have a garlic flavor, but can be used like green onions

Description/Taste

Lecano kale, also known as Toscano kale has deep dark green leaves that are super-savoyed, long and narrow with a striking blue-grey color. It is one of the most robust and vigorous growers in the kale family.

Nutritional Value
An excellent source of vitamin C, nutritious-plus kale provides iron, vitamin A, calcium, magnesium, potassium, protein, carbohydrates and dietary fiber.

Applications
Kale loves to be in the company of garlic, pork ginger and rich oils. Long simmering brings out an amazing dimension in its flavor profile. The kale collapses in the pan and then swells as it cooks. This method will create a nourishing sweet “pot liquor” that will yield the need for bread to sop up its every juice. Their are many vitamins in that pot liquor to so make sure to use it all.
