Boc Choi Ginger Salad

We will be serving this salad tonight at the Open House!

1 large head Bok Choy

1Tbl salt

1/2 cup bell pepper

1/4 cup chopped green onions

1 inch of ginger root grated

2 Tbl cilantro chopped

3 Tbl rice vinegar

2 tsp honey

pepper to taste

Thinly slice Bok Choy leaves and slice stems diagonally.  Toss bok choy leaves, stems and salt and let sit in a colander.  Let stand to wilt veggies for 1/2 hour.  RInse, drain, and squeeze out liquid. Add onions, and bell peppers to choy.  Place remaining ingredients in a bowl and mix well, then toss on the salad in a bowl.  Chill and serve about 6 people.
