Kohlrabi Slaw, Kale Quinoa Apple Salad

Here is the Vegan kohlrabi slaw recipe, we will be eating this for lunch today on the farm:                                           

2 large kohlrabi, sliced into matchsticks or shredded
1 carrot, shredded
1small onion, thinly sliced
2/3 c sugar
1/2 c white vinegar
1/4 tsp. Salt
1/2 t. Celery seed
1/2 tsp. Dijon mustard
1/4 c vegetable oil

Mix dressing, pour over vegetables and toss. Let sit overnight or at least a few hours before serving.

Here is another idea:

Kohlrabi Slaw
serves 2

3 medium kohlrabi, peeled, stems trimmed off, grated
1/3 green or purple cabbage, shredded
2 carrots, grated
1/2 red onion, grated
1/4 cup golden raisins
1 tbsp sugar
1 tsp salt
1 tbsp cider vinegar
4 tbsp chopped cilantro
1/4 cup mayonnaise (or more, if you prefer

Combine all ingredients in a bowl and mix well. Chill for several hours before serving.

Quinoa Apple Kale Salad

Start with two cups of dry quinoa, and cook (which made at least four cups cooked, if not more). Then massage chopped curly kale with a drizzle of olive oil and a dash of salt.


Dice three apples and then add the quinoa, apples and kale together before whisking the dressing. For this larger batch used:

4 Tbsp dijon mustard

7 Tbsp olive oil

juice from one lemon

salt and pepper to taste

Combine all ingredients in a jar and shake like crazy before drizzling it over the salad.

You can add Feta crumbled and sprouts if you like! Image
