Carrot and Daikon Ginger Slaw


1 Daikon Radish- shredded

5 Carrots- shredded

1 Tb ginger shredded

1/3 cup Mayo

splash of sriracha

1tsp apple cider vinegar

1tsp soy sauce (or Braggs)

juice of ½ lime

pepper and salt to taste

Serves 4-6


  1. Rinse daikon and carrot
  2. Shred Daikon, carrots and ginger
  3. Mix mayo, srirancha, apple cider vinegar, soy sauce, and lime juice
  4. Taste and add pepper and salt if necessary
  5. Pour over shredded veggies and toss well.

This can sit in the fridge for a day and  is still wonderful!
