Savory Butternut Squash and Black Bean Burritos

We often cook black beans in bulk in our roaster pan, then we have them available to add into all kinds of things. One of our favorites are these burritos
1 Tablespoon olive oil
1/2 onion chopped
3 cups butternut squash, peeled, cut into 1/2 inch cubes ( I use my bosch food processor to make this easy and quick)
1/2 teaspoon cumin
1/4 teaspoon cinnamon
1/2 teaspoon salt
2 cups of cooked black beans
8 flour tortillas
1 1/2 grated sharp cheddar
Sour cream and cilantro for garnish

Directions:
Heat oil over medium in skillet, add onions and sauté for 5 min. Add winter squash, cook stirring often until just tender. If it is sticking add a bit of water. When tender add cumin, salt and cinnamon. Add in beans. Serve with tortillas, cheese, sour cream and cilantro. 8 polite adults or 6 hungry adults! Sometimes when time allows the girls love to make tortillas!
