4 med sweet poataoes scrubbed
2 heads of garlic sliced thin
1 onion peeled and chopped
1 T olive Oil
2 handfuls of fresh spinach chopped
2T feta crumbled Terrell Creek cheese is the best!
2 T blue cheese crumbled
roast whole sweet potatoes in 350 preheated oven for about 40 min, or until they grow soft. While potatoes are in the oven, sautee on med heat, onion, garlic until brown, add chopped spinach. Remove from heat as soon as spinach wilts. Soon as potatoes are soft, remove and cool to touch. With a knife make a slice on top of the sweet potato and carefully remove 1/2 of the inners, placing them in a bowl. Add spinach, onions, garlic, and chopped feta, fluff. Then use a spoon to put the mixture back inside the sweet potato skins. Add crumble blue cheese to the top. ( if you are making this ahead of time this is a perfect time to place them in the fridge!). Place stuffed potatoes back in the oven until the blue cheese melts on top. Enjoy, these can be sliced in disc shapes, these very visually appealing!
