Kohlrabi and Zucchini pancakes Klaas Bakker, CSA member
Looking for new ideas about what to do with kohlrabi! This one was different and fun to have.
2 tbsp vegetable oil
1 medium kohlrabi
celery root (equal amount, optional)
6 tbsp flower
1 tsp cumin seeds
parsley (finely chopped)
salt and pepper to taste
- Grate kohlrabi, zucchini, (and celery root, or carrot optional). Press to remove excess fluid. Mix together with chopped onion, eggs.
- Cover with the flower and mix it in thoroughly
- Fry (I set frying pan on 375 F, but heat pan first to avoid sticking.
